Hylians in the setting are an elf-like species of non-humans. Link is one of them, and according to the author the Link in each game is actually different even if similar character.
The plot of Ocarina of Time causes a time paradox in the setting that leads to 3 alternate universes: one where young Link returns and grows up normally (leads to Majora's Mask, Twilight Princess, Four Swords), another where adult Link disappears (leads to Wind Waker and sequels), and third when Link fails to defeat Ganon (leading to the original series, Link to the Past, Oracles, Awakening, etc.).
