This song traditionally uses characteristic sounds for the animals. As in, dogs don't bark or even roof, they woof. Lambs baa baa. Cows moo. Pigs oink. Ducks quack. Etc...

The song Ohio, first appeared in the 1917 book, Tommy's Tunes by F. T. Nettleingham and featured the phase, "Old Macdougal had a farm in Ohio-i-o".

An earlier song (1908), The Farmyard (aka: The Merry Green Fields), seems to be very influential and features verses based on animals and their sounds, such as "With a moo moo here and a moo moo there, Here a moo, there a moo, Here a pret-ty moo."

But the earliest known influence is a song called The Kingdom of the Birds (1719). "Booing here, Booing there, Here a Boo, there a Boo, every where a Boo"

The song, Old Missouri, is a variant and focuses on the different parts of a mule rather than different animals and their sounds.
