This is likely caused with the script being modified after or before the voice acting (and the voice actors getting the older or newer version), or the voice actors have been given leeway to improvise and the subtitles were not modified to reflect this.
Usually the differences are minor, but for non-native speakers following what is being spoken may become difficult (and confusing) if they use the subtitles as an aid (rather than relying on them or the voice overs completely).
