On technical side this is likely result of inventory tracking specifically tracking every item type in existence instead of being dynamically allocated. So even if you don't have any apples, it will still track that you have zero apples instead of simply not having apples at all in the inventory list. It might not show items you have none of, but it's still tracked in the background.
