The plume of flames is used by mostly movie makers and others who want impressive visuals while actual military use of flamethrowers involves napalm (goes down, the incendiary sticks to the targets and burns things quite effectively instead of going rapidly upwards and maybe luckily putting someone's hair on fire).

The first Flamethrowers video game was released in 1982.

Electronic Arts, Sega and Ubisoft published most of these games.
